Apple Oatmeal Pancake

It's apple season, so naturally, my fridge is stocked with apples. Every day, I find new ways to incorporate them into my meals. 

Warm Apple Cinnamon Oatmeal is one of my favorite breakfast choices. But these Apple Oatmeal Pancakes quickly became my new obsession. 

They are sweet, thick and fluffy, and deliciously flavored, with bits of juicy apple. So tasty. They pair perfectly with a cup of Matcha Latte in the morning.  

Oats. Oatmeal is a hearty, healthful, and nourishing staple in my cupboard. I enjoy using them as a substitute for ordinary flour. 

They are high in fiber, particularly beta-glucan, a soluble fiber that promotes heart health. They also promote good digestion and immunity.  

I used rolled oats here, but you may substitute quick oats if you like. 

Milk. I used oat milk, but you can use any milk that you choose or have. It's worth noting that coconut milk will not work well here. 

Ceylon cinnamon. Also referred to as "true" cinnamon. Cinnamon contains potent antioxidants that have anti-inflammatory properties. (5, 6) Cinnamon gave these apple pancakes an incredible flavor.
