Apple Cider Mochi Donuts  

Glutinous Rice Flour (Mochiko): 2 cup Baking Powder: 1 teaspoon Sugar: 1 cup Eggs: 2 large Apple Cider: 1 cup (reduced to 1/2 cup, see instructions)

Powdered Sugar: 1 cup Apple Cider: 2-3 tablespoon Cinnamon: 1/2 teaspoon

For the Glaze  Glaze

Cinnamon Sugar: 1/2 cup sugar mixed with 1 teaspoon cinnamon Chopped Nuts: For added crunch Drizzle of Caramel Sauce: For extra sweetne

Optional Topping

Boil Apple Cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat. Reduce: Lower the heat and simmer until the cider is reduced to about 1/2 cup. This intensifies the flavor. Set aside to cool.

Step 1: Reduce the Apple Cider

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan or line with parchment paper. Mix Dry Ingredients: In a large bowl, whisk together the glutinous rice flour, baking powder, cinnamon, nutmeg, and salt.

Step 2: Prepare the Donut Batter

Combine Wet Ingredients: In a separate bowl, beat the sugar and eggs until well combined. Add the melted butter, reduced apple cider, milk, and vanilla extract, and mix until smooth. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.

Fill the Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 3/4 full. Bake: Bake in the preheated oven for 15-18 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean. Cool: Allow the donuts to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Mix Glaze Ingredients: In a small bowl, whisk together the powdered sugar, apple cider, and cinnamon until smooth. Adjust the consistency with more apple cider if necessary. 

Step 4: Prepare the Glaze

Dip the Donuts: Once the donuts are completely cool, dip the tops into the glaze, allowing any excess to drip off. Optional Toppings: If desired, sprinkle the glazed donuts with cinnamon sugar, chopped nuts, or a drizzle of caramel sauce.
